Puto, Mangga ug Sikwate (Rice Pudding,Mango & Hot Cocoa) – LP 7

Lasang Pinoy 7 theme this month is ALMUSAL… breakfast. Now on its 7th edition hosted by fabulous Joey of 80 Breakfasts.
Did I have a hard time thinking what to prepare? No of course not… I thought of one of my favourites, a breakfast that will take me back to my childhood. My carefree life growing up in a small town of Cebu.
Puto (puto maya in Tagalog) paired with a slice of sweet Cebuano mango and hot chocolate. For the benefit of non Filipino readers, it’s glutinous rice cooked in coconut milk (pretty much like the Thai sticky rice pudding).

Ensaymada

Finally I baked my own ensaymada, the Filipino sweet bread that taste like brioche, that is topped with creamed butter and sugar. When I was growing up in a small town, we did not snack on ensaymadas. Our merienda (snacks) was boiled or fried bananas, corn, boiled cassava or sweet potatoes, sometimes freshly dug peanuts, and the Cebuano binignit.
Binignit, is banana, yam and other tubers cooked with coconut milk.

Having baked goods for snacks was too posh for a kid like me, who grew up in a place full of coconuts, bananas, corn, cassava and yams.

Pulutan is a kind of food that is served as accompaniment to a drink. It comes in different kinds like meat, fish, nuts, chips. It’s prepared in different ways…raw, fried, steamed. Basically, it is anything that makes drinking enjoyable. Even a pet might start to look as a pulutan depending on the level of alcohol drinkers(I call them “bingeirs”) have had but that is a different story I would not even like to touch.
Those words were written by our host this month, Aling Ting. Lasang Pinoy # 6 is all about wash it down with the booze!!!!
Stir Fried Flat Green Beans…. & 10 Random Facts About Me
Last week been hectic. A week before that, my back ached, did not do much heavy things. I felt like a semi invalid. Culprit of my back pain, the new aerobics shoes, they were too stiff and I kept tripping over or twisting my foot.
As soon I was back to my merry self, the weather cooperated too. Sun smiled and the sky was blue – bit warmish. Took the chance to clean the veranda, cleaned the glass doors and the fresh air circulated around the flat boosted my energy to catch up with my domestic responsibility.
I was even in all fours scrubbing the stone floor of the kitchen and the marble work top.

Fishy Cravings… Oven Grilled Mackarel
My weekly “menu” always include fish. Always! I went to the fishmonger hoping I can find SALMON. Been craving of the way our friend in Stockholm, Sweden prepared it. She topped it with feta, cashews and some Thai chili sauce. I have re invented this for my crew mates in France and they all love it.

Stir Fried Bean Sprouts
My quest for certain ingredients took me to three different Asian stores in Ambelokipi where most of the Filipinos reside.
After cleaning the fridge and going thru my cupboards, I finally have a clear picture, what I need to get. I actually have no more meat left except for some pork which have been ignored inside the freezer.
Its a great way to start the year’s first week CLEAN FRIDGE!!

Eggplant Salad
Way back April when I was still in Norway, Market Man of Manila posted on his terrfic food blog about Grilled Eggplant Salad
I knew I would have to wait for a while before I will have a chance to do this. First because I hardly saw good aubergines in Oslo and secondly I wanted good sweet tomatoes that has ripen under the Mediterranean sun.
It is very easy to do and very refreshing. I used a good balsamic vinegar and served this aubergine salad with roast chicken.
Market Man said this salad will go with seafood as well.
My husband was expecting a greek melitzano salata where the “meat” of the aubergine is reduced to a pulp and serve as dipping.But he loves this, so did I (I hated aubergine when I was young!)
Overview of Maja Blanca
I took some of the maja blanca to some Swiss friends and as usual they were curious. I was asked what it is and the nearest equivalent I could find is BLANCMANGE. I did explain that instead of milk I used coconut milk. They all love it.
Blancmange (bluh-MANHZH) is a pudding made of cornstarch, milk, vanilla, and sugar. Gelatin is substituted for the cornstarch. The mixture is poured into a mould, chilled and unmoulded. Served with sweet sauce or fresh fruit.
So I explained I used sweet corn and coconut cream and the conversation that afternoon was on Filipino food. And guess what they requested next time I visit them: spring rolls.
